Mammi
Mammi is a wine obtained from fermentation with indigenous yeasts and a maceration on the skins for about a month.
In the vineyards we have never made use of synthetic chemicals neither for nutrition nor for the defense of the vines. A rare example of pure Sangiovese.

- Vinification: The grapes are de-stemmed and gently pressed. Fermentation takes place with indigenous yeasts and the grapes macerate for 20 days at 28-30 °. The malolactic fermentation takes place in cask. The wine was left to mature in 7.5 hl barrels for two years
